Earlier this week I posted about the smashing media dinner I enjoyed at Nellie Cashman’s Monday Club Cafe at The Westin Kierland. It was an epic multi-course meal that I am still drooling over. Everything we ate that night was incredible, every bite leaving a memorable impression on my palate, but there was one dish that I can’t stop dreaming about – the Green Chile Griddle Cakes.
I can go on and on about how fabulous these griddle cakes are; but I don’t have to because the awesome folks at Nellie Cashman’s are sharing the recipe with me so that I can share with you – and you can make them and see for yourself!

Seriously, friends, you will want to make these griddle cakes…or pay a visit to Nellie Cashman’s and order them. They are incredibly delicious and the sauce and mushroom ragout on top makes them filling enough to be a main course.
