These autumnal ice cream floats are the perfect fall treat. Sparkling apple cider poured over creamy caramel and/or butter pecan ice cream topped with cinnamon whipped cream – HELLO autumn!
I made two versions of these yummy treats — one with salted caramel ice cream and the other with butter pecan. Both were outrageously awesome. Pretty sure cinnamon ice cream would be delicious in these too, but I could not find cinnamon ice cream in any of my local grocery stores.
Feel free to enjoy these after the kiddos go to sleep and add a shot of caramel vodka. WHAT?!?! And you thought a caramel apple ice cream float couldn’t get any better!
What you need for two ice cream floats:
- Six scoops of ice cream of your choice – I recommend salted caramel, butter pecan, cinnamon or even plain old vanilla.
- 1 Bottle Sparkling Apple Cider
- Cinnamon whipped cream (1 cup heavy cream, mixed with 3 heaping Tbs. powdered sugar, 1 tsp ground cinnamon and 1/2 tsp pure vanilla extract, whipped until soft peaks form)
- Caramel syrup and candied pecans for garnish
What you do:
- Put a little caramel syrup into the bottom of each glass. Swirl some on the sides of the glass too, if you want to be fancy.
- Place three scoops of ice cream into each glass.
- Slowly pour the sparkling cider over the ice cream. Let it rest and the bubbles to go down a bit, then add more cider.
- Top with a huge dollop of cinnamon whipped cream.
- Garnish with candied pecans and more caramel syrup.
- Enjoy! Be sure to bring the bottle of cider with you so you can keep topping off until every last drop is devoured!
