Grimaldi’s Pizzerias recently launched a Summer Selections menu available through the entire month of July! The seasonal items include Barbecue Chicken Pizza, Strawberry Spinach Salad, Summertime Sangrias, Blueberry Cheesecake and Strawberry Cheesecake.
I recently had the delicious opportunity to sip and sample some of these menu items and I am happy to report back – YOU WILL LOVE THEM!
The Strawberry Spinach Salad is a true delight. Crisp leaves of baby spinach are tossed with a tangy sweet strawberry vinaigrette, fresh-sliced strawberries, almonds, red onions and feta cheese. There are lots of tastes and textures going on and the combination of the sweet fruit and creamy, salty feta is a winner. It’s a vibrant salad that is the perfect starter for a summer pizza feast.
Now let’s talk about that pizza. I count pizza as my all-time favorite food and I think Grimaldi’s pies are some of the best in town. I love their crust, perfectly thin, with the right amount of chew and a hint of char from the coal brick oven. They are doing pizzas right over there and the seasonal Barbecue Chicken Pizza is no exception. That charred crust goes perfectly with the zest tang of the Sweet Baby Ray’s barbecue sauce, the chicken is tender and the addition of cilantro adds a touch of brightness to the whole thing. I’ll be back before months end for another slice of this pie.
In addition to the salad and ‘que pizza Grimaldi’s has added a couple of cheesecakes to the summer menu. Berries are the name of the game in these cheesecakes and both are heavenly.
The Blueberry Cheesecake is vanilla flavored with fresh whole blueberries baked inside. It’s topped with whipped cream and granola for a textural crunch.
Everything on Grimaldi’s summer selections menu is delicious but my favorite is the Strawberry Cheesecake and I truly hope they decide to keep it around all year long. Unlike most strawberry cheesecakes that just have gelatinous berries on top Grimaldi’s has baked the strawberry flavor into the cheesecake, making a light and fluffy pink dessert. It almost tastes like strawberry ice cream which is a very, very good thing. It was simple, light, creamy and had just the right amount of sweetness.
It’s too hot to cook in July so let the folks at Grimaldi’s do it for you! These summer menu items are only available through July 31 so don’t miss out.
