Happy National Taco Day! Tacos are definitely something to celebrate and to mark this momentous of occasions I have a recipe to share.
Behold!
Chicken and Veggie Tacos with a Spicy Cilantro Lime Crema
Ingredients:
- 12 wheat/corn blend tortillas
- 1 lb. ground chicken
- 1 15 oz. can black beans, drained and rinsed
- 1 15 oz. can of southwest or Mexican corn
- 1 large zucchini, washed and cut into small cubes
- 1 bell pepper (any color), washed and cut into small pieces
- 1 tsp. chili powder
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1/2 tsp. cumin
- juice of 1 lime
- 2 Tbs. finely chopped cilantro
- Spicy Cilantro Lime Crema* (recipe follows)
- Avocado slices for serving (optional)
- salt & pepper to taste
Directions:
- In a large skillet thoroughly cook ground chicken, crumbling into small pieces as it cooks.
- Add black beans and corn and mix to combine everything. Let the corn and beans heat through, about 5 minutes.
- Add all the seasonings to the mix.
- Add the zucchini and bell pepper and allow to cook for a few means.
- Turn off heat and add lime juice and cilantro. Mix to incorporate everything.
- Season with salt & pepper as needed.
- Heat the tortillas, either in microwave or on griddle.
- Assemble the tacos by adding heaping spoonfuls of chicken & veggie mix.
- Add spicy cilantro lime crema.
- Garnish with avocado and lime wedges, if so desired. Enjoy!
*Spicy Cilantro Lime Crema
Ingredients:
- 1 cup sour cream
- 1/4 cup cilantro (about 1/2 bunch)
- 1 jalapeno, remove stem, seeds and ribs
- juice of 1 lime
- 1/4 teaspoon salt
Directions:
Add all ingredients together in a food processor or blender and whiz until everything is well combined.
