We LOVE popcorn at our house! Never pre-packaged microwave popcorn, always freshly popped in a wee bit of coconut oil on the stove – because it’s so easy, and healthy.
Usually I pop the corn, maybe add a little salt and that’s it. But sometimes a little sweet treat can turn a long day around so I know this lightly sweet, super cinnamon-y popcorn will score huge points as an after-school snack.
I use coconut oil for pretty much all my oil/fat needs when cooking – I think it has a lighter taste than most other cooking oils. This recipe calls for organic cane sugar, which tends to be much more course than granulated refined sugar. Sometimes I give it a whirl in the blender to get it finer. There is no butter or oil added to the popcorn once it’s popped and I find that the finer the sugar, the better it sticks. Or you can use organic brown sugar; the molasses in it helps the sugar stick to the popcorn but you really need to sift it through your fingers so you don’t have clumps of sugar in your popcorn.
A huge plus to this popcorn is that it makes a lot! I give Jax a small bowl of it as a snack and she’ll enjoy the rest over the next couple days. Store the leftovers in a gallon-size ziplock bag and remove as much air as it can to help keep the popcorn from going stale.
Cinnamon Sugar Popcorn
Ingredients:
- 1/2 cup popcorn kernels
- 2 tbs coconut oil for popping (or your choice of cooking oil)
- 4 tbs organic cane sugar
- 2 tsp ground cinnamon
- 1 tsp kosher salt
Directions:
- Add the cinnamon, sugar and salt together in a small bowl and thoroughly combine.
- Add the oil and popcorn kernels to a large heavy bottomed pot with lid.
- Place the pot on the stove over medium/high heat. Keep covered and give it an occasional shake to keep the kernels from burning. You will hear the kernels popping. Keep the lid on and continue to shake the pan on the heat until the popping stops. Remove from heat.
- Remove lid and sprinkle the cinnamon sugar in small amounts at a time. Replace the lid, shake to distribute the sugar and repeat until you have used all the sugar.
- Portion and serve!
*If leftovers get stale give it a 10 second zap in the microwave.
