I made the frozen banana “ice cream” again and I’m sharing the delicious details with you again. Only this time it’s more awesome than before.

You will want to make this, I promise…so keep reading.

The last post I did on this guilt-free frozen treat was by far one of my most popular entries to date. And I have improved upon the creamy concoction 10-fold, by adding peanut butter! In doing so, I’ve returned some of the guilt into the mix, but you can still feel good that you are not totally indulging in full-fat cream and you are indeed getting a serving of fruit with each decadent serving. Hooray!

We’d been holding off on trying this combo because pretty much everything we eat we share with Princess Jax. I have been scared to give her peanuts and/or peanut butter because I worried about allergies. We finally caved and gave her her first taste of PB a few weeks ago, I had my phone in hand ready to dial 9-1-1 should she even sniffle. Daddy scooped his finger into the jar and let her taste it. She loved it and whined for more. Big HOORAY the only reaction she had to the peanut butter was one of pure joy!

When you taste this creamy, dreamy, chocolate-y, peanut buttery “ice cream” you will react with pure joy too!

It’s very rich and the peanut butter and use of chocolate pudding makes for a super smooth, silky mouth-feel. And it is so stinkin’ easy to make. I now keep a stash of frozen bananas on hand at all times so we can whip this up in mere seconds.

The hubs and I made a vow to never, ever buy real ice cream again. There just is no point when you can eat a huge bowl-full of this without a trace of self-loathing after.

You will need about 6 frozen bananas (cut in 1 inch chunks), 1 box of instant, sugar-free chocolate pudding (made according to package directions) , and 1/4 cup peanut butter.

Put all ingredients in the food processor and take it for a spin.

It will look like this when it’s done “processing.”  The consistency will be similar to that of a very thick milkshake and you can eat it just like this. It will be fabulous. Or you can put it in an air-tight, freezer-friendly container with a lid and let it firm up for an hour.

If you let it solidify a bit you can have all sorts of good fun! Scoop it in a pretty dessert dish, pile it on a sugar cone, or…
