Happy National Taco Day! Tacos are definitely something to celebrate and to mark this momentous of occasions I have a recipe to share.


Chicken and Veggie Tacos with a Spicy Cilantro Lime Crema


  • 12 wheat/corn blend tortillas
  • 1 lb. ground chicken
  • 1 15 oz. can black beans, drained and rinsed
  • 1 15 oz. can of southwest or Mexican corn
  • 1 large zucchini, washed and cut into small cubes
  • 1 bell pepper (any color), washed and cut into small pieces
  • 1 tsp. chili powder
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1/2 tsp. cumin
  • juice of 1 lime
  • 2 Tbs. finely chopped cilantro
  • Spicy Cilantro Lime Crema* (recipe follows)
  • Avocado slices for serving (optional)
  • salt & pepper to taste


  1. In a large skillet thoroughly cook ground chicken, crumbling into small pieces as it cooks.
  2. Add black beans and corn and mix to combine everything. Let the corn and beans heat through, about 5 minutes.
  3. Add all the seasonings to the mix.
  4. Add the zucchini and bell pepper and allow to cook for a few means.
  5. Turn off heat and add lime juice and cilantro. Mix to incorporate everything.
  6. Season with salt & pepper as needed.
  7. Heat the tortillas, either in microwave or on griddle.
  8. Assemble the tacos by adding heaping spoonfuls of chicken & veggie mix.
  9. Add spicy cilantro lime crema.
  10. Garnish with avocado and lime wedges, if so desired. Enjoy!

*Spicy Cilantro Lime Crema


  • 1 cup sour cream
  • 1/4 cup cilantro (about 1/2 bunch)
  • 1 jalapeno, remove stem, seeds and ribs
  • juice of 1 lime
  • 1/4 teaspoon salt


Add all ingredients together in a food processor or blender and whiz until everything is well combined.
